the best plant-based recipes (updated 1.15.23)

Why reinvent the wheel? I love cooking but no shame in following others’ recipes. Here are some of my favorites.

  • Mac & Cheese – This recipe has been a staple for a few years in our household. 

  • Collard greens – I add about five drops of liquid smoke, but otherwise, I stick to the recipe.

  • Chana masala (easy version) – I suggest taking a masher and mashing up some of the chickpeas and tomatoes to thicken it up. 

  • Pad Thai – 10/10 easy, 6/10 taste

  • Chickpea Burgers – fast, easy weeknight meal

  • Red beans & rice – this was a homerun. I’m not sure why this recipe calls for such a long cooking time. I used adzuki beans and followed the recipe otherwise – 30 minutes was plenty of time in the instant pot.
